I am a huge comfort food eater and I love all things potatoes. Since becoming plant-based over twelve years ago, I have learned a lot about cooking potatoes for plant-based eaters. So hold on to your hats because you’re going to love this super easy and amazing tasting plant-based mashed potatoes. These potatoes are seriously blog worthy!
Growing up, I had heard these called smashed potatoes and for a kid that’s pretty funny. The name stuck with me, although I’m the only person in my family who calls them smashed potatoes. Regardless, they are so good and there are rarely ever any leftovers.
Mashed potatoes, if cooked thick enough are great for making potato pancakes the next day. We loved them growing up. Fry them up in a skillet with some plant-based buttery spread, and you can have yourself a plate of delicious potato pancakes. So delicious!
What you want to do, is plan ahead with this dish. Roast a garlic head or two (for spare) ahead of time in the oven at 400C for 40-45 minutes. Drizzle some olive oil on top to give garlic some extra flavour and to allow it to brown a little bit.
Now that you’re ready to begin making this amazing mashed potatoes, let’s get started.
Ingredients:
The Best Plant-Based Mashed Potatoes Ever
Ingredients
- 8 yellow fleshed potatoes
- 1 tsp sea salt
- water, to boil
- salt + pepper, to taste
- 1 head garlic, roasted
- 4 tbsp plant-based butter
- ¾ cups non-dairy milk, I used fortified rice-milk
- ¼ cups chives or green onions, chopped
Instructions
- Wash all the potatoes.
- With skin on, cut all the potatoes into roughly equal sized cubes.
- Add sea salt and boil the potatoes until soft, check with fork until deserved softness is reached.
- Drain the potatoes.
- Mash potatoes, add plant-based buttery spread until well combined.
- Remove garlic skins and add garlic cloves to potato mixture.
- Add non-dairy milk, mashing/mixing well until desired consistency is reach.
- Add sea salt and pepper to taste.
- Top with chives or green onions if desired.
- Enjoy!
