You guys!!! This post is about how to make savory pumpkin seeds after you have carved your pumpkin. I wanted to post this last week, but I was under the weather, so if you still have a pumpkin kicking around that is uncarved, this is the recipe you want!!

First and foremost, carve that pumpkin. You can get carving utensils at your local grocery store before Halloween or at Michaels. I got ours at Party City years ago. Depending on what you plan to do with your pumpkin, the tools will very. If you solely want to roast those seeds, you’ll need a knife to carve a lid on the top and a scooper … this makes the job so much easier.
Once you’ve scooped out those seeds and separated them from the pumpkin guts, let the seeds sit in a warm bath of salt water for about 30 minutes. After your seeds have completed their salt water bath, drain them and let them sit for about 2 hours, stirring aggressively and frequently to let the moisture drain as much as possible.
- Preheat your oven to 350F.
- Melt 2 tbsp of vegan butter, add 1 tbsp of seasoned salt. Combine.
- Add butter mixture to 1 cup of pumpkin seeds. Stir well.
- Place seeds on cookie sheet and cook for 15 minutes or until golden brown.
I found cooking in this sequence for 2 cups of pumpkin seeds helpful:
Cook 15 minutes.
Flip.
Cook 15 minutes.
Flip.
Cook 7 minutes.
Flip.
Cook 7 minutes.
Place in a glass lock dish for enjoying later. Pumpkin seeds are packed full of nutrients and are high in protein, so be sure to make these your healthy snack!
