I’m going to start off by saying that this guacamole recipe is simply THE BEST guacamole I’ve ever had and I’ve been to Mexico so that’s saying a lot. Guacamole has become one of the staple recipes in our home over the last few years and it HAS TO BE homemade with THIS recipe. Store bought is not an option in our home, so I always have to make sure that I have ripe and ready to go avocados on hand. We put quacamole on just about everything … lol.
What do you do if your local grocery store does not have ripe avocados? I take one of those paper bags over at the mushroom area of the produce section. This is essential. The night before or better yet, two nights before you need them, put the unripe avocados in the paper bag in a cool, dark place. I place them in my drawer where I store my toaster. I’ve also heard you can get them to ripen faster if you put a banana in the bag as well, so sometimes I will do that too. I swear, it works like a charm when you need ripe avocados.
This recipe is so easy and it comes out tasting great. I use the large sized avocados so if all you have are the smaller ones, you’ll have to decrease some of the ingredients such as the salt and the lime juice.
Let’s get started …
First, I cut the avocado in half and the remove the pit.
Second, I scoop out the avocado from the skin with a tablespoon and then mash either with a masher or a fork. I’m lazy and don’t like to dirty more dishes than I have to, so I use a fork if possible.
Third, add the salt. I would use about ½ teaspoon if you don’t like your guacamole too salty and then add more if needed.
Fourthly, squeeze the juice of a fresh lime either with a fork, twisting it into a cut lime or using a lemon/lime squeezer like this one adding 1 tablespoon. Mix well.
Next, add the onions, garlic and tomotoes, mix well and serve. Enjoy.
Optional:
You can add cilantro. If I’m eating it alone, I’ll add cilantro, but my kids aren’t fans, so I don’t add it if they are eating it.
Plant-Based Guacamole
Ingredients
- 1 avocado
- 1/2 tsp salt
- 1 tbsp lime juice, fresh
- 1 clove garlic
- 1 tbsp onion, chopped
- 1 tbsp tomato, chopped
Instructions
- Cut avocado in half, scoop out the avocado and mash in bowl.
- Add the salt and lime juice and mix well.
- Add the remaining ingredients and mix until combined.
- Enjoy!
