In the summertime, I crave salads like crazy. In the wintertime, they are the furthest thing from my mind. I love a good green leaf lettuce salad mixed with a vibrant array of colourful vegetables. I also love to add fruit and nuts occasionally. But what makes it taste so good is an amazing salad dressing. I prefer light over creamy myself.
When I go to the grocery store to pick up salad dressing, I usually have a couple of go-to’s, but occasionally, I want to try something different, but I don’t know what I want. I’m sure people have walked past me in circles as I stand overwhelmed at the selection of salad dressings. It’s just so hard to choose and I read all the ingredients to ensure it is plant-based and has as few ingredients as possible. Those ten-letter ingredients are not essential and somewhat unhealthy. Fewer is better in this case.
My favourite vinaigrette, is a homemade dressing I found on-line here a few years ago. It is seriously so yummy. It does call for honey, but I substitute with agave and it is seriously to die for. Yes, that’s right … to die for, so look no further, this is your new balsamic vinaigrette dressing that you can bottle up and add to your household condiments.
Balsamic Vinaigrette
Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic vinaigrette
- 2-3 tbsp honey or agave
- 2 tsp Dijon mustard
- 1/2 tsp dried thyme
- 1 clove garlic, minced
- salt and pepper to taste
Instructions
- Combine all ingredients into a mason jar.
- Shake until all ingredients are combined well.
- Pour over salad and enjoy!
