(Personal review)
Hello friends. It’s been a minute since I last posted here, but I am back with another review from one of the vegan recipes from Kim Barnouin’s cookbook called Skinny Bitch The Ultimate Everyday Cookbook. Please note, I am not an affiliate for this cookbook. I’m only making these dishes to try and see what I’d like to add on my regular rotations and to learn about combining ingredients that I’d not normally pair up.
This Kale and White Bean Soup is perfect for a day like today. It’s been a little chilly this past week and there’s nothing better in my books than a hot soup to soothe the soul on a blistery day.
One of the things I love about soup is how easy it is to make … especially plant-based soups. You literally sauté the vegetables, add stock and simmer. Easy peazy.
This soup had a surprise ingredient in it, one that I don’t usually add in soup, but it’s needed to add the colour to this soup. That ingredient is tomato paste. Just a couple of tablespoons is all it took and this gorgeous soup was on point with presentation. All those beautiful colours in there makes me want to enjoy a second serving.
My personal review for this soup is 5 stars. I thought it was incredibly easy to make. The ingredients were easily accessible in the grocery store and the taste on my palette was really pleasing. I highly recommend this soup and I know I will be making it again. I would say that making a double batch would be easy and go further because I know you too will want a second bowl.
