I’m not sure what gave me this craving, but for the past few days, I have been craving a cucumber salad with a vinaigrette dressing. Maybe it’s been these crazy hot June days. When I think of cucumbers, I think about crisp, fresh, hydrating goodness. Mmmm … so good.
So I went on-line to hunt down such a recipe for a cucumber onion salad and I found one that was not only delicious, but it was seriously such an easy recipe. I found the recipe here, but if you want to see how I made it, continue reading my blog.
One of the things I love about a good cucumber salad is how thin the cucumber slices can be. The thinner the better for me because to allow the dressing to soak into every bite of cucumber goodness. I love a light salad and this gives me the opportunity to dust off my mandolin. I used my mandolin to slice both the cucumbers and the onion. It was seriously so easy.
As for the dressing, just add the ingredients into a mason jar and shake away. It’s light and it tastes so sweet.

Cucumber + Red Onion Salad
Ingredients
- 2 large cucumbers, sliced
- 1 red onion, sliced
- 1/3 cup apple cider vinegar
- 1/4 cup water
- 1 tbsp sugar
- 1 tsp fine sea salt
- 1 tsp black pepper
Instructions
- Slice cucumbers and onions.
- Combine remaining ingredients into mason jar and shake. Pour over cucumbers and onions. Mix well and enjoy!
