(Personal review)
It’s been awhile since my last review, so I thought I better get back to it. Today, I will be sharing my review of the banana and cinnamon muffin recipe that comes straight out of the Skinny Bitch Ultimate Everyday Cookbook. This is another recipe categorized under the breakfast section of Kim Barnouin’s cookbook, but I feel it could serve as a snack anytime throughout the day.
This recipe uses walnuts so is not a nut-free recipe for those needing to know.
Now, let’s get to the nitty gritty of my review.
This is a very simple recipe to make and doesn’t take long at all to bake. There are two changes I would make to this recipe for those needing a little guidance.
The first thing I would change is the baking temperature. The recipe says to preheat the oven to 325F, but I found that the oven was neither hot enough and I ended up having to cook longer. I Google’d a few muffin recipes on-line and the consensus was to preheat the oven to 375F and bake muffins for 20-25 minutes, so in this case, I would bake the muffins for 20 minutes after you add the walnut mixture topping. This should bake the muffins to perfection. Please note, I am not sure whether any of the recipes in this cookbook use the convection option when baking, but I did not.
The second thing I would change is simply a preference of my own. Normally, when I bake banana bread, I use 4 bananas to get the full-body banana flavour. This recipe calls for two bananas and I did not feel like it had enough banana flavour, so next time, I will add more bananas to get the full body banana flavour I love so much.
Tip.
Here’s a tip I’ll share with you as well. Rather than using the paper muffin liners, I purchased re-useable silicon muffins liners and they work perfectly. Using these is better for the environment (less landfill) and also creates less waste and who wants to waste any of your delicious muffin batter?? It won’t stick to the silicon liners which means more muffin for you to enjoy!
I have enjoyed having these muffins to snack on this past week. My two younger boys are also around and have enjoyed them too. I love easy recipes like this muffin recipe, so I will definitely be making them again.
