(Personal review)
Welcome to my very first review for the first recipe in the Skinny Bitch Ultimate Everyday Cookbook. There is no rhyme or reason why I chose the first recipe in the cookbook to review except that I looked at the ingredients and it sounded both easy and delicious. I love recipes with few ingredients and this one had a short list.
The recipe I chose to review is called Fresh Corn-off-the-Cob Pepper Frittata. For those of you who are unfamiliar with what a frittata is, it is similar to a quiche but without the pastry. It’s all egg. So how can one possibly replicate a frittata in the plant-based world? Trust me when I say, egg replacer is not the answer. In this case, you need something that resembles the texture of scrambled eggs and mixes well with chopped vegetables.
In my pre-vegan days (over 15 years ago), I loved eggs, my favourite style of egg being fried eggs, over easy. That was a difficult loss for me at the time, but now I don’t even think about them and haven’t for many, many, MANY years. My kids also enjoy fried eggs.
The egg substitute in this recipe is extra-firm tofu, fully drained. I actually let mine drain all day and then put it in the fridge over night simply because I got busy and forgot to go back to it 😀 The one ingredient I wasn’t expecting to see in this recipe was soy sauce, but to be honest, I enjoyed that subtle flavour in each bite. It was a welcome taste.
On the other hand, I felt as though the dish in itself was a little underwhelming in flavour. I would have modified the recipe by adding 1 tsp minimum of minced garlic, as well as, closer to 1/2 tsp of fine sea salt. You could also change up the ingredients by adding spinach, cherry tomatoes or vegan shredded cheese. Other than that, this was a delicious recipe and with minor revisions, I would definitely make this recipe again. After only one recipe, I feel like I’ve already learned something!
If you are cooking for anyone who is vegetarian or vegan, this is a great substitute and will not leave you or your guests feeling left out over brunch. Two thumbs up!
